Made this one really impromptu the other night when I realized I didn’t have the ingredients for the Baked Stuffed Chicken I was trying to make. I took a look at what was in the fridge and made do and everyone loved it!
Feta, Tomato & Basil Stuffed Chicken
Ingredients:
-Cherry or Grape Tomatoes
-Feta Cheese (one tub)
-Fresh Basil
-3-4 Chicken Breasts
Preheat the oven to 375.
Mix the stuffing in a bowl. I used sweet tomatoes, which is why they are yellow in the picture. We had them on hand but cherry or grape tomatoes would work great too! I use kitchen scissors and cut each tomato in half.
I probably cut about 15 tomatoes. I also use kitchen scissors to cut up about 20 pieces of fresh basil. I stack them and cut them length-wise so make little shredded pieces – easy peasy!
Lastly, I dumped in a tub of crumbled feta cheese.
I was out of toothpicks so I just did the best I could with pounding the chicken breasts flat and then creating a mock “center” where I scooped the stuffing and then rolled the chicken breast around as best I could. But honestly it worked great… they wrapped and I put them face down in the baking dish. I basted them in a bit of lemon olive oil that I have – you could use fresh evoo and squeeze some lemon juice on for the same effect.
Any extra stuffing I had, I spooned on top of the chicken before cooking.
I then cooked everything at 375 for about 35 minutes. The chicken is pictured with some lemon spinach orzo – the entire plate was relish! And bonus – it took me 20 minutes TOPS to put the whole thing together. I’m all about the quick prep dinner that the fam loves!
Sure looks like an Epicurean delight and obviously divine on the palate. . . . love that it is so easy to create too! That one is next on my ‘what’s for dinnie’s’ list. . . .
