Olive Oil Cake
A light & delicious cake good for any occasion
  • 3 Large Eggs
  • 2 Cups Granulated Sugar
  • 2 Cups All-Purpose Flour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • 12 oz PDO Sitia Greek EVOO
  • 10 oz milk
  • 2 oz Orange Liqueur
  • 2 oz Fresh Orange Juice
  • 3 Tsp Lemon Zest
  • 4 oz finely chopped almonds
  • Salt
  • Powdered sugar
  1. Preheat oven to 350 degrees F. Butter a 10-inch cake pan.
  2. In a large bowl, whisk together the eggs, sugar, PDO Sitia Greek EVOO EVOO, milk, orange liqueur, fresh orange juice, and lemon zest.
  3. Sift together flour, baking soda, 1baking powder & salt.
  4. Mix the dry mixture into the wet mixture. Whisk until well blended. Fold in chopped almonds.
  5. Pour the mixture into the buttered cake pan. Bake for 1 hour. Place on a rack to cool. Run a knife around the edges and place it on a plate. Sprinkle with powdered sugar and serve.
