Turkey Pesto Pizza
2 10-inch pizza crusts (store-bought or homemade)
1 cup pesto sauce
3 cups Italian blend shredded cheese
1 cup freshly grated Parmesan cheese
1 1/3 shredded, cooked turkey (white & dark meat)
Instructions
Preheat your oven to 425 degrees F.
Spread one cup of pesto on each pizza.
Sprinkle each pizza with 1/2 cup Italian blend cheese and 1/4 cup Parmesan cheese.
Next, add about 10 olives to each pizza, followed by 2/3 cup turkey meat.
Top with remaining Parmesan and Italian cheese.
Bake for 10-12 minutes or as instructed on your pizza crust and the cheese is fully melted.
To serve, lightly sprinkle with extra parmesan and fresh Italian parsley, if desired.
Notes:
We used a combination of white and dark meat for both flavor and texture. Shredded white meat can be on the dry side, so we found that using both was better.
You can use any kind of cheese you like. The Italian blend gives this a little more flavor, but mozzarella would be fine too. And if you like an extra cheesy pizza, of course you can add more.
This is a great use for leftover turkey! I like to freeze my turkey in one and two cup portions for easy meals like this.
