Tuesday night, I hosted my book club at my house. We read Me Before You, which made for a phenomenal book club discussion if you are looking for one for your own book club’s next meeting.
I turned to Pinterest for a few recipe ideas and decided to take a stab at this Avocado Feta Dip that I had pinned a lifetime ago. The original recipe calls for a few things like garlic, which I’m allergic to, so I simplified and made this recipe. It took me about 5 minutes to make and the bowl was literally licked clean by the end of my book club’s meeting! A huge hit and I will definitely make it again!
Avocado Feta Dip:
Ingredients:
1/2 of a red onion
juice from a lime
3 avocados
1/2 of a cup of feta cheese
fresh ground pepper
1. Toss all of the ingredients into your food processor or a blender. Mix them up. I used my blender and had to stop it and mash the avocados a couple of times just because they were so thick.
2. Garnish with a few extra bits of the feta and serve! Here’s what I served with – I used some blue corn tortilla chips and as I said, everyone ate them up!
This looks delicious. Will definitely have to give it a try.
Oh my. I love avocados and I really like feta cheese…must try this at my next cookout!
