Normally I’d be all, an onion dip? Meh? I mean I like onions and all but there are so many ooooohy-and-goooey dips that I would think would be better.
Boy was I wrong.A friend of mine made this at my house when she was visiting over the summer and I’ve become so obsessed with it, I’ve made it like 5 times since.
It’s so simple and it’s so not anything you would think would be stop-the-show-goodbut I’m telling you guys, people LICK the bowl clean when I bring this to parties. Oh and pair it with Fritos. You can pair it with anything, of course (baguette slices would be delish) but my friend first intro’d it to me with Fritos scoops and GOOD GOD. Just trust me and try it.
Recipe: Baked Sweet Onion Dip
Ingredients:
1 cup of mayo
1 8 oz pkg of shredded Swiss cheese
1 medium sized Vidalia Onion or Sweet Onion cubed up (about a cup)
Mix the 3 ingredients. Bake at 375 for about 30-45 minutes or until it starts to bubble and brown. Serve.
You can make this ahead of time too. I sometimes make it in the morning when I know I’m going to be in a rush to get somewhere.
