Following with last week’s Girl Scout dessert theme {Thin Mint Cupcakes}, I have another delicious recipe for you that you can make with my FAVORITE Girl Scout Cookie – the Samoa! (Or Caramel Delites, as they call them here in PA. But I grew up calling them Samoas so they will always be Samoas to me.)
Recipe: Samoa Girl Scout cookie Brownie
BROWNIES
1 cup butter, softened
2 cups sugar
4 eggs
1½ tsp. vanilla
½ cup cocoa
1⅓ cups flour
½ tsp. salt
15 Samoa cookies (crumbled or blended to small chunks)
BROWNIES DIRECTIONS
Using a food processor or a ziplock bag and rolling stick crumble the Samoa cookies to very small pieces
Cream butter and sugar together
Now add eggs and vanilla and blend well
Adding the salt, cocoa and flour and stir to combine
Don’t overbeat
Now add the Samoa cookies 3/4 of the amount you have in the batter, fold it in
Pour batter into a greased 9X13 pan
Bake at 350 F for 20-25 minutes
Let cool completely
We also like to add a drizzle of caramel sauce on top also to make it extra gooey
