We eat broccoli several times a week because my kids love it. But we always do it the same way – boiled, and sometimes with melted cheese (sometimes plain). I saw something on Pinterest about roasting more vegetables in 2014 on the same day my Mom posted a similar recipe on Facebook she saw online and thought, what the heck, I’ll try this with broccoli. The result was DELISH. I did it the same way I roast kale and it was as good, if not better.
Roasted Broccoli
Ingredients:
Broccoli heads
Fresh ground pepper
Fresh ground sea salt
Fresh lemon juice, squeezed (optional)
Preheat the oven to 350.
Cut broccoli heads and put them on a foil lined baking sheet.
Cover them with olive oil. Add fresh ground pepper and fresh ground sea salt, if you have it. Lastly, squeeze a tiny bit of fresh lemon juice on them.
Bake at 350 for 10 minutes. Crunchy and so flavorful!
I put parmesan cheese before popping in the oven and they’re so good!

What a wonderful way to cook broccoli which I never liked until I read your mother’s recipe!!! Would love to see more great ideas from her. Does she have anymore really easy gourmet recipes she would be willing to share!!!
